Along with the frozen strawberries, I grabbed some frozen raspberries and took out my blender, determined to make a cold and creamy dessert.
I also had a can of coconut milk in the pantry and decided to give it a try, and the end result was a fantastic bowl of strawberry coconut soft serve!
Strawberry Coconut Soft Serve
PrintStrawberry Coconut Soft Serve
- Prep Time: 5 mins
- Total Time: 5 mins
- Yield: 1 1x
Description
This sweet frozen treat is perfect when you need a quick and healthy dessert but don’t want to go out to a fancy frozen yogurt shop. Pick your favorite frozen fruits, blend and enjoy!
Ingredients
- 1 cup frozen strawberries
- 1/4 cup raspberries
- 1/4 cup light coconut milk (plus more, if needed, to get everything moving)
- Tiny splash coconut extract
- Shredded coconut for garnish
Instructions
- Combine strawberries, raspberries and coconut milk in a high-powered blender or food processor. Blend until smooth and creamy (several minutes).
- Add coconut extract to taste. (Note: Start with a very small amount and increase gradually. Coconut extract is very strong!)
- Scoop soft serve into a bowl and garnish with shredded coconut.
If you are a banana-lover, feel free to add half of a frozen banana (and likely a little more coconut milk) to the mix to make the soft serve even creamier! And if you’d rather not use coconut milk, you can easily use almond, soy or regular milk in its place, but, if you choose to do this, I would definitely add half of a frozen banana to keep the soft serve nice and creamy.
Enjoy!
What a great, simple way to make ice cream! Trying this with blueberries tonight 😉
Ahhhh this sounds so refreshing! There are some days I come home from work and want to head straight for the pint of Half Baked Ben & Jerry’s in the freezer, but this is such a great (and healthier) alternative! 🙂
Wow this sounds amazing, especially with the thought of adding a banana. Yum!
YUM! I can’t wait for the weather to warm up again in Boston (hopefully tomorrow!) my boyfriend and i were going to go for ice cream last night when we deemed it too cold. i cant wait for summer 🙂
I looove using canned coconut milk for just about anything – curries, cereal + milk, smoothies. This sounds delicious!
Got inspired after your curry dish yesterday and picked up a can of coconut milk at the supermarket yesterday. And we have some frozen mango in the freezer…I see some coconut mango soft serve in my future. 🙂
i love the strawberry coconut combo!!
This sounds like the perfect healthy summer dessert! Love the idea of using coconut milk too. That definitely keeps it nice and creamy, almost like a fruity gelato or something!
This looks great – I’ll have to try it out! Perfect for hot weather!
Guess who is making this recipe? THIS GIRL! My tastebuds are screaming. That is a genuis idea Julie! Perfect for these hot Alabama days over here
This looks soo good, especially in this ninety degree weather we’ve been having, but I don’t know if my whimpy little blender could handle it!
Delicious! I have a recipe like this on my blog too. It’s SO good!!
I also love making it with frozen cherries and cocoa powder for a chocolate covered strawberry soft serve. Pure amazing.
This thing looks amazing. I have a thing for soy milk in the last weeks, but I believe that the coconut milk is much creamier
What a delicious and simple smoothie. You’re really turning me onto coconut milk! I think I’m going to get some at the store and try a smoothie of my own. Will let you know how it turns out 🙂
Uhm, so this looks and sounds CRAZY good. I love all things coconut, so that’s a definite plus. I love how simple this is too! I hate recipes that have like 20 ingredients…it’s just so much effort.
That sounds amazing!! Can I use just a regular blender for that or do I need a special one (like the magic bullet, etc.)? It’s definitely getting to be that time for summer treats like this 🙂 Can’t wait to try it!
Such a great idea!! Definitely giving this one a try soon!
That looks SO good! I would never have thought of using coconut milk when making it. That must add a ton of flavor!
I’ve never used coconut extract before. This looks delicious!
That is SUCH a great idea! I need to bust out my blender more.
I make something like this all the time, but I usually use half a banana. It’s so yummy!
That looks so yummy! I bought some fruit bar popsicle things a couple days ago-I only have a couple left and all my favorite flavors are gone! I’ll have to try something like this to take their spot.
Oh yum! What a great summer treat! I am loving all of your various ways to incorporate coconut milk. It sure is delicious!
I made something like this last weekend… but I added some pineapple juice and some booze to make an awesome frozen cocktail! I looooove coconut milk, it makes everything taste like vacation 🙂
I love that this doesn’t require an ice cream maker!
Coconut milk rocks!! there is SO much you can do with it…..curries (on the savory side) cannot be beaten! & this would be great after quite a hot curry to say the least
This looks declicious. I think I need to get a food processor. I’ve been seeing a lot of recipes that I would love to try but would need a food processor.
I have a fridge full of strawberries (Publix BOGO got me!) Can’t wait to try this for dessert later!
I FINALLY purchased a new blender so I may have to give this a whirl when I get home!
Looks bomb! My boyfriend and I finished a pint of mango sorbet yesterday. Talk about hitting the spot!
Ohhhhhh gosh! I bet coconut milk makes it SO creamy!! Ive got to make this! I also think maybe a coconut milk base would make a delicious almond joy ice cream?? Now you have the wheels turnin’! 😉
The best thing about the vitamix I got is that I can make soft serve like this so easily! Now that it’s finally warm here in Chicago I’ll have to give this one a try!
Sounds so good! Can’t wait to replicate!
I looove anything coconut. Seriously obsessed. This would be awesome with just bananas and a little pb.
Mmm! I’m going to need to get some coconut milk, I think.
This sounds awesome!! I think that I will try making it with coconut vanilla almond milk, which I am currently obsessed with!
O my goodness that looks amazing! I made almond butter and banana ice cream the ither night. I just might have to try this one too!
Ooooh…this sounds so good! Love the fact that it’s non-dairy. Look forward to giving this one a try!
That looks delicious!!! And so much cheaper than going out for ‘ice cream’ or ‘fro-yo’! Good call!!
Holy yum! This looks delish, refreshing and I love that bright color!!
I love smoothie “ice creams” probably more than actual ice cream!

BRILLIANT! This is such a fantastic recipe. I’m not a huge chef nor creative with food, but I might have to give this one a try. Simple enough I might be able to master it. Thanks for the awesome idea!
This looks delicious. I’ve done soft serve with frozen bananas before, but I should try this too.
Sounds amazing! I’m on a huge coconut and strawberry kick at the moment!
