At work today, I taught a boot camp class and had a blast!
I am subbing for another instructor who is out for the next few weeks and followed her format for the class. (You can see one of her workouts in this post: Boot Camp Workout.) She creates six stations around the gymnasium and groups of five people hop from station to station to complete the workout. Equipped with an upbeat playlist and some basic gym equipment, I taught the class and walked around from station to station, providing modifications for some of the more difficult exercises and answering any questions.
Here is today’s workout:
The class passed by quickly and everyone looked nice and sweaty by the end. Though I am enjoying teaching water fitness, boot camp-style classes are more my style since they’re the kind of workouts I absolutely adore. Fast paced and challenging!
Here are links to video demonstrations of some of the exercises:
Since I didn’t complete the workout with the class, I did my own upper body weight workout before finishing up work for the day (I worked the early shift again). I headed home around 1:30 p.m.
Lunch
Once I made it back to our place, I threw together lunch using leftovers from last night and freezer food.
I tossed some leftover chicken and roasted cauliflower in a bowl with corn that I heated up from the freezer. It was good, but the highlight was dessert that came in the form of truffles!
On Sunday afternoon, I made a batch of truffles by following a recipe that my friend Minda sent to me. They are gluten-free, vegan and freakin’ delicious! They taste like little bites of brownie batter.
To make them, first process two cups of walnuts in a food processor. Then add one cup of pitted dates and four tablespoons of cocoa powder and process in again until a “dough” forms. Roll into balls, toss in a bag with unsweetened coconut and enjoy!
I ate two this afternoon and loved every last bite.
You must make these! Yum!
Question of the Afternoon
- What is your favorite (mostly) healthy dessert?
Kaitlyn says
1) I need those bites now
2) Boot camp classes are my absolute favorite! One of the first group exercise classes I ever took as a book camp style class and it was so intimidating, but I grew to love it so much!
Kaitlyn says
and by “book” camp, I mean “boot” camp. Whoops!
Shel@PeachyPalate says
Making raw desserts is so handy! I love making them in to mega brownie shapes! Made some raw lemon cheesecake squares I’ll be sharing on the blog tomorrow…lots of coconut butter for the creamy topping!
Lisa says
Oh, I love that workout it looks awesome!
Especially with the alternating cardio and strength. The best way to get it done!
Oh man, I have a ton of favorite healthy desserts, I just posted a recipe today for healthy mint chocolate chip “ice cream” I’ve been obsessed with lately, and I love so many other things.
Nicole @ crazyabouthealthy.com says
My fave healthy dessert is a banana sliced, sprinkled with cinnamon. Heat in the microwave for 30 seconds, and top with walnuts! Tastes like banana bread.
Jan @ Sprouts n Squats says
Yum those truffles look delicious! I love making banana soft serve ice cream with frozen bananas and frozen mango blended and then topping it with coconut flakes, it is so good for a healthy dessert.
That boot camp class looked intense but fun! Got to love circuit workouts 🙂
Jessica says
I love just some fresh, juicy fruit for dessert. Chocolate covered strawberries are great too. Definitely satisfies my chocolate cravings but doesn’t go overboard.
Linz @ Itz Linz says
ICE CREAM!! itz got protein & calcium –> itz healthy! 😉
Hannah @ CleanEatingVeggieGirl says
Those truffles look fantastic, and it is even better that they are vegan! 🙂

I have a lot of favorite “healthy” desserts, but my brother’s girlfriend introduced these Raspberry Almond Bars to me over the weekend and they were amazing…

I’m definitely going to make those bites later…I’ve been loving dates lately! Thanks!
Sara @ LovingOnTheRun says
Those bites look great! They look like a wonderful quick and simple snack!
megan says
The bootcamp class sounds like fun!
Those truffles look divine…I must make them soon. May have to use regular coconut as I can’t find unsweetened anywhere!!
Irene says
Do you think there is another kind of nuts I could sub for walnuts for a similar texture? I’m really not a fan of walnuts, I’m afraid. I have a ton of cashews…?
Molly Antos says
Any time I’m thinking “healthy dessert,” I IMMEDIATELY head to http://chocolatecoveredkatie.com/ – love her! I also found a recipe for a sweet potato cheesecake a bit back in a magazine that was pretty tasty.
Giselle@myhealthyhappyhome says
Mmmm… I love bites like those! I just bought dates and coconut today! That workout looks great! Love boot camp style!
Sarah says
Chocolate peanut butter for sure!!! They sounds delish! I love chia seeds and peanut butter, I bet they are awesome together!
Sommer says
I would like to try the Chocolate Peanut Butter because anything peanut butter has to be good in my book. The acai berry sounds interesting too I have never tried one!
Carolyn says
I have almond meal and don’t really care for walnuts, do you think that would be the same? Gotta buy dates now! Sounds so good!! Thanks.
Carlee K. says
I would be up for trying any of the flavors but chocolate peanut butter is the winner in my book. Best combination!
Kammie @ Sensual Appeal says
I want those truffles in ma mouth right meow 🙂
Great workout too! Sounds like a sweaty one!
Leanne says
Do you think you could make those in the Vitamix? I’m always concerned about whether it’ll pull away from the sides enough to form the “dough”.
Rachel says
I’ve had those brownie bites before!! So good!! You should try them with roasted hazelnuts in place of the walnuts… so delicious as well!!!
Jenny says
I made these trail mix chocolates and they are literally the easiest thing in the world to make!! 🙂

I am SO excited to see not ONE, but TWO vegan things mentioned on your blog today! My hubby and I have been vegan for 6 months next week and we’re always looking for healthy, yummy snacks!
Kelly @ Runs for Food says
That workout looks awesome! I love froyo as a health(ier) dessert!
Melissa says
Yum! Those truffles look great and I bet they taste even better! My favorite go-to healthy treat is definitely fresh fruit in the form of cantaloupe and a microwaved apple! Sticking a chopped, fresh apple in the microwave for a couple minutes creates the taste of an apple pie! So good and refreshing!
mary @ minutes per mile says
i think fro-yo counts as healthy, right? especially when topped with oreos and gummie bears.
Sarah @ Sweet Miles says
Just out of curiosity, what does Ryan do? Does he work normal hours, like an 8-5 gig? I’m so jealous that you have time during the day to come home and chill out 🙂
Lindsey says
A piece of dark chocolate always hits the spot!
Lauren Williams says
I really enjoy Boot Camp classes at 24 hour fitness where I have a membership. It is fun to do circuits with new people and the changing exercises make the time go by fast. I have been doing the Paleo diet so those truffles would be perfect. I haven’t brought myself to buying a food processor but I may have to invest 🙂
Mer says
I’ve got to try those truffles!
Caitie @ twentytwofit says
those look delicious! my favorite healthy dessert, especially in the summer, is banana “ice cream”. I freeze a banana and then stick it in my food processor, blend it, and add some almond butter and cocoa powder before blending it one more time. Has the consistency and sweetness of ice cream without all the additives and dairy!
Stacey says
Please do more boot camp style workouts! I love em!
Annette@FitnessPerks says
Whoa! Those desserts look FAB!! I love coconut.
That workout looks fun too!
Nancy says
I would go for the coconut.
Liesl @ Fitnessinthekitchen says
Yummy looking truffles!
I will have to bookmark this workout, looks like a fun one.
Jill says
Let’s just say I eat a LOT of dark chocolate and fruit every night. I’m a bit concerned about my fruit and chocolate consumption actually…especially since so late at night and after every meal. Oh my.
Wish I were healthy enough to do that kind of workout. I can’t even do one jumping jack…go me…
Anyway, one thing is for sure: you can’t be shy to do the kind of job you do!
Jill says
Oh and there is much more dessert in addition to the stuff I mentioned above…just can’t reveal all my choices (there are a lot)!
Alexis says
These bars look delicious! I would love to try the chocolate peanut butter flavor!
Michelle @ Peanut Butter and Running Shoes says
Definitely, need those bites now!
Erika @ fortheloveofpeanutbutter says
Those balls. Oh my goodness those balls. I’ve been big into making my own Larabars with dates lately but I think….uhh….KNOW those will satisfy my sweet tooth. 🙂
Kristi says
Those truffles look absolutely delicious. I never tried dates, but I think I’m going to have to try them and this recipe.
Logan @ Mountains and Miles says
I’m a big frozen yogurt fan – I just get the original tart and load it up with every kind of fruit that they have!
Lisa E. says
Oh my gosh! I just ran into my kitchen to make these 🙂 I had to sub the walnuts for the only nuts I had left (slivered almonds – thought I had whole but I guess not). I had to add a drizzle of almond milk to get the “doughy consistency” but they turned out SO good!
I opened the container to have a second one and it smells just like brownies. 🙂
meg says
I’ve just discovered that I like coconut (I think it was a texture thing before?) so would LOVE to try the coconut flavor!
Emily says
Chocolate Vega Sport protein sludge (1 scoop protein + a splash of almond milk or H20 ) with a TBS each of unsweetened cocoa powder and PB2!
Emily says
Or, 2 TBS PB or AB with unsweetened cocoa powder and a packet of stevia. Obviously, I have a problem with the chocolate-pb combo.
Valerie says
droooooooool. definitely putting those on my to-do list for this weekend! i can’t wait!
Jan Klein says
I tried boot camp for the first time tonight. I’ve been chickening out of going for months. Finally mustered up the courage & made it happen. It wasn’t pretty, but I survived!
