Description

I tossed the almonds in melted coconut oil and a splash of maple syrup seasoned with cinnamon, cayenne pepper and curry powder. The end result was a sweet and slightly spicy batch of roasted almonds that we could not stop eating. Be warned: These little babies are quite addicting!


Ingredients

  • 2 cups raw almonds
  • 1 tablespoon + 1 teaspoon tablespoon coconut oil, melted
  • 1 teaspoon maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 300 degrees.
  2. Combine melted coconut oil and maple syrup. Add spices and stir.
  3. Add almonds to spiced coconut oil mixture and toss to coat.
  4. Spread out almonds on a cookie sheet sprayed with cooking spray and roast in the oven for 20 minutes, flipping the nuts halfway through.
  5. Allow to cool and enjoy!
