Thai Chicken Lettuce Wraps

Description
Thanks to simple preparation, this recipe comes together in less than 10 minutes!
Ingredients
- 2 tablespoons nut butter of choice (I used almond butter)
- 1 tablespoon milk of choice (I used coconut milk)
- 1 teaspoon tamari
- 1/2 teaspoon honey
- 1/4 teaspoon garlic powder
- sea salt to taste
- pepper to taste
- 4 large leaves romaine lettuce
- 1 cup shredded chicken
- 1 sliced bell pepper
- sliced pineapple
- 1 tablespoon fresh mint
- 1 tablespoon fresh cilantro
Instructions
- In a small bowl, combine the nut butter, milk, tamari, honey, garlic powder, salt and pepper
- Add the chicken and toss to coat
- Spoon the mixture onto the pieces of romaine and top with pepper, pineapple, cilantro and mint
- Roll up and eat like a taco

Note: I omitted the pineapple because I’m weird about combining pineapple and any kind of meat. I also added avocado because it’s awesome.
Simple, right!? And oh-so-delicious!
Simple is the key word I would use to describe the recipes and workouts in Gina’s new book. But don’t confuse simple with easy when it comes to the workouts! Just because Gina does a great job of explaining and simplifying exercises and providing modifications doesn’t mean the workouts found in HIIT It! won’t challenge you!
Gina is one of my closest blogging buddies and I could not be more thrilled for the release of her new book or more proud of my talented friend. She clearly poured her heart, soul and expertise into this book and it’s jam-packed with great information for those who already feel comfortable with their fitness routine and may be looking for a new challenge and those who may be brand new to exercise.
The underlying theme of HIIT It! is getting more for less. Seeing faster results from shorter (more intense!) workouts. Streamlining your meals to make healthy eating easy and sustainable.
Gina goes into great detail about the foundation of high intensity interval training (HIIT) in chapter one. She provides well-researched information that substantiates the quality workouts detailed throughout the book and provides photos that make it easy for a reader to see how to do exercises while maintaining proper form.
There are more HIIT workouts than I can count found throughout the book which can nearly all be done at home with a few pieces of equipment (dumbbells, resistance bands, etc.). The workouts in this book are also an awesome resource for the busy traveler!
The HIIT It! Diet section of Gina’s book is discusses nutrition in a sustainable way. Gina emphasizes the importance of eating nutritious foods (whole foods with an emphasis on protein and produce) and provides a bunch of simple snack ideas and recipes, like the Thai chicken lettuce wraps you see above. Some recipes that immediately caught my eye: Banana Almond Muffins, Breakfast Cookie Dough Cereal, Orange Honey Salmon and Butternut Squash Mac & Cheese. YUM.

Last night i made an old standby of an egg scramble. I love that you can add basically anything to it, but I used egg whites, zucchini, broccoli, red onion, asparagus, sun-dried tomato, bacon, and rotisserie chicken, topped with ketchup, siracha, avocado and roasted red pepper hummus. So simple, quick, healthy and flavorful, and it’s great for when you want to empty out the fridge– just use whatever is on hand!
I need to start incorporating HIIT into my workouts. And I love Gina’s blog!

I have a few go to recipes, one is an egg-white and veggie omelet, and one is spring rolls. Both are easy, healthy and delicious.
I would love to get Gina’s book because although I have some good go-to recipes, I feel like I have lacked some creativity in the kitchen lately. Also HIIT workouts are my absolute favorite for being fast and effective so I would love to have some more!
Favorite easy recipe is sweet potato nachos…I was influenced by Janae from Hungry Runner Girl:) Bake the sweet potato in slices for your chips and top with your choice of protein, cheese, salsa, etc.! So yummy. I would like a copy of this book because I am really working on changing my body composition in 2015 (as opposed to long bouts of steady state cardio) and I would love to use this as a resource!!
My current favorite easy recipe is a southwest quinoa bowl – tomatoes, avacado, corn, black beans etc! The best part is it lasts for days!
Finding (easier) ways to incorporate heathy foods and prep (so I’m not eating all the things while deciding what to eat!) as well as new workouts to not get in ruts like I tend to are two main reasons why I’d love to read this book!

I am all about easy-peasy as well (in fact my hubs does all the cooking) so my go-to snack is a heaping of cottage cheese on romain with grapes halves and a cut up grilled chicken breast mixed in – absolutely delicious! I love HIIT workouts, I get my butt kicked and feel so great afterwards, plus their very easy to work in with my schedule.
Definitely ready to get on the HIIT bandwagon. Short, but intense, workouts are what i need right now with how busy this year has already been for me.

My easy go-to recipe lately has been chicken salad! I have started to add in additional veggies just to make it a bit healthier. I eat it on some yummy crackers and it’s a great way to get my lunch in while working! I would love Gina’s book because I recently started to get back into the “healthy” routine after having my son, and ANY way I can maximize my time in the gym is greatly appreciated!
My favorite easy recipe is organic chicken breast topped with seasoning, spinach, tomatoes, and mozzarella cheese! Yummy with steamed brussel sprouts.

Ever since seeing overnight oats on your blog, I’ve started eating that for breakfast almost every day of the workweek. It doesn’t take long to assemble the night before, and it keeps me satisfied and full until lunch.
I’ve been hearing a lot of buzz about HIIT but need some ideas for workouts that don’t revolve around running, which is too hard on my knees.
My go to for an easy meal is definitely overnight oats, no effort involved!

*all my go-to recipes are super easy (I’m pretty lazy in the kitchen) a brown rice bowl with lots of protein and veggies is probably the quickest, most filling, and husband approved 🙂

My go to easy peasy recipes are anything crock pot…..that thing is amazeballs!! I want a copy of the book because I love HIIT workouts, but with 2 kids in school and a full time job I’m finding it hard to find time to head to the gym. The at home HIIT workouts would be awesome and easier to stick too since I can do them when the kids go to bed.
A home-made Chipotle bowl (rice, blackbeans, lettuce, chicken/tofu, salsa) is also my go-to simple meal! I am looking to add more cardio into my workout regime without spending hours on the treadmill! HIIT workouts are great when I don’t have a lot of time, so Gina’s book sounds perfect!
I need more easy peasy meals in my life, but my go-to’s are probably salads. Some of my favorites are spinach, chicken, berries and a vinaigrette dressing or spinach, cucumbers, chicken, tomatoes and avocados with a vinaigrette! I love “on-the-go” workouts and I’m an avid at-home work out. Since Beachbody hasn’t created a way to stream their DVDs via ITunes, etc, this book would be fantastic!

1. Easy peasy receipe: veggie fajitas… sautee mixed veggies in taco seasoning and then serve in a tortilla… so good!

My favorite go-to quick and easy meal is a chicken chunks (even canned is great), avocado chunks, and any veggies I have around. I chop up and steam the veggies, then combine the avo chunks and chicken in a chicken salad and serve on top with some hot sauce. Easy, healthy and lots of flavor!
I’d love to win HIIT it because, as a reformed gym rat, I’ve just started learning the value of quick, intense workouts and I can’t get enough!
My go to easy dinner is precooked chicken sausage and fresh veggies – cooked on a skillet with a bit of oil and some seasonings – healthy and done in under 10 minutes. Yum!
