Thai Chicken Lettuce Wraps

Description
Thanks to simple preparation, this recipe comes together in less than 10 minutes!
Ingredients
- 2 tablespoons nut butter of choice (I used almond butter)
- 1 tablespoon milk of choice (I used coconut milk)
- 1 teaspoon tamari
- 1/2 teaspoon honey
- 1/4 teaspoon garlic powder
- sea salt to taste
- pepper to taste
- 4 large leaves romaine lettuce
- 1 cup shredded chicken
- 1 sliced bell pepper
- sliced pineapple
- 1 tablespoon fresh mint
- 1 tablespoon fresh cilantro
Instructions
- In a small bowl, combine the nut butter, milk, tamari, honey, garlic powder, salt and pepper
- Add the chicken and toss to coat
- Spoon the mixture onto the pieces of romaine and top with pepper, pineapple, cilantro and mint
- Roll up and eat like a taco

Note: I omitted the pineapple because I’m weird about combining pineapple and any kind of meat. I also added avocado because it’s awesome.
Simple, right!? And oh-so-delicious!
Simple is the key word I would use to describe the recipes and workouts in Gina’s new book. But don’t confuse simple with easy when it comes to the workouts! Just because Gina does a great job of explaining and simplifying exercises and providing modifications doesn’t mean the workouts found in HIIT It! won’t challenge you!
Gina is one of my closest blogging buddies and I could not be more thrilled for the release of her new book or more proud of my talented friend. She clearly poured her heart, soul and expertise into this book and it’s jam-packed with great information for those who already feel comfortable with their fitness routine and may be looking for a new challenge and those who may be brand new to exercise.
The underlying theme of HIIT It! is getting more for less. Seeing faster results from shorter (more intense!) workouts. Streamlining your meals to make healthy eating easy and sustainable.
Gina goes into great detail about the foundation of high intensity interval training (HIIT) in chapter one. She provides well-researched information that substantiates the quality workouts detailed throughout the book and provides photos that make it easy for a reader to see how to do exercises while maintaining proper form.
There are more HIIT workouts than I can count found throughout the book which can nearly all be done at home with a few pieces of equipment (dumbbells, resistance bands, etc.). The workouts in this book are also an awesome resource for the busy traveler!
The HIIT It! Diet section of Gina’s book is discusses nutrition in a sustainable way. Gina emphasizes the importance of eating nutritious foods (whole foods with an emphasis on protein and produce) and provides a bunch of simple snack ideas and recipes, like the Thai chicken lettuce wraps you see above. Some recipes that immediately caught my eye: Banana Almond Muffins, Breakfast Cookie Dough Cereal, Orange Honey Salmon and Butternut Squash Mac & Cheese. YUM.

This book looks awesome! My favorite go to meal is chicken fajitas – sautee veggies and bake chicken breast seasoned with Bold Taco seasoning, serve over brown rice and lettuce. Yum!
My go to recipes are homemade pizza, chicken piccata, and chicken tenders. They do require some prep, but its quick and yummy and my family enjoys them. I would love to win HIIT IT! because (1) I love reading (2) I love all things fitness (3) I am starting to need to make a transition from running as my cardio to something quicker now that my daughter is getting older. I love a light chicken salad over a bed of lettuce, so refreshing and easy! I would like the book because I just started my second semester of dental school and finding time to workout is tough! I think the book would help me out a lot and give me some inspiration 🙂

When we don’t have any leftovers, I love to make my apple and peanut butter wrap for lunch. Slicing the apple and assembling it can take a little bit of time (aka more than 5 minutes), but it is oh-so-delicious!
I am huge breakfast lover!!! My favorite breakfast right now is using leftover Simple Truth Mediterranean Quinoa and Sweet Potato. I put the leftover quinoa in a microwave safe bowl and load some raw spinach on top of it. I heat it for 1min so the quinoa is hot and the spinach starts to wilt. I reheat a 1/2 sweet potato and add that on top of the spinach/quinoa mixture. Last I add a fried or poached egg. Once everything is put together I cut the egg up in the bowl and mix everything together. I call this my energy bowl. It is packed with a ton of nutrients, good carbs and tons of protein. YUMMMM!

My go to “i’m too lazy to cook” meal is probably spaghetti squash with marinara.
Or tuna salad. Spaghetti squash takes longer, but is just about zero work.
And we always have tuna on hand, so you can’t go wrong there! Just use greek yogurt instead of mayo for the extra protein. Awesome!

Tuna or smoothies
I love HIIT workouts and woud love to have a guide all in one place. Otherwise i get scattred trying to find new ones to try.
I have 3 young boys so my go-to recipe usually involves the crock pot, meat, and salsa. I will get super fancy and add other foods, but that’s the base! I would love Fitnessista’s book to keep things simple and healthy! That’s my mantra for 2015!

1. rotisserie chicken and a microwaved baked potatoe! easy, fast and simple! you can add whatever toppings uopi want and some bbq sauce to dip chicken in.
2. we are planning on starting a family soon and i think these short more effective workouts that can be done at home, will be really effective!
When I think easy- I’m thinking ten minutes or less. I LOVE making Chicken sausage veggie skillets. I just cut up whatever veggies I have (onion, pepper, mushroom, broccoli, etc) and saute them with garlic, then add in a couple chicken sausages, sliced. Before it is finished, I pour some balsalmic vinegar in the pan and reduce it and sprinkle a bit of parmesean cheese on top.
Takes ten minutes and perfectly healthy but leaves me feeling full!
For a quick easy dinner I love boiling some eggs and throwing together a large salad!
I am looking for new workouts to get me out of my slump her book sounds awesome from the many reviews from bloggers!
I would love to win a copy of the HIIT IT! Book because I’m in desperate need of some motivation to eat better and get active! With two little ones, 3 years and 15 months it’s hard to make time for myself and get fit!
1. Today my lunch consisted of two hard-boiled eggs, black beans, and some salsa! Suuuper easy and lots of protein. If I forget to bring eggs to work, I sub a veggie burger, usually from Morningstar. I’m a little concerned about the whole soy isolate debate, but those little ‘burgers’ are delish!
2. I am always looking for new workout routines that simplify a whole body workout. It sounds like this book might have just that!
This is awesome! I have been wanting to try HIIT exercises so this would be perfect! The only thing I can think of off the top of my head at the gym is sprints on the basketball court or jump-rope. I could use this!

I would LOVE to win a copy of HIIT It because I am a huge fan of HITT workouts! My go-to workouts on Tuesday and Thursday mornings are always some type of HITT. Lately I have been loving fitness blender videos but I am always looking for new things to incorporate into my workout routine! My favorite go to meal is a big pile of mixed greens with a fresh veggie burger, avocado slices, and cornbread.
My fav go to recipe is butternut squash quesedillas. I fill them with butternut squash, cheese, guacamole, shredded lettuce, roasted peppers/onions, on multigrain tortilla. I serve them with salsa and sour cream and a side of homemade black bean soup.

I have been into many go-to recipe ideas lately….some days it is so hard to decide which one to settle on. I am loving avocado & spinach so that has been in many recipes. A quick one is toast, avocado, tomatoes slices, garlic powder, and a fried egg on top! Warm and tasty!
Definitely avocado burgers- take ground turkey or chicken and combine with an avocado and onion into patties before baking! perfect on a bun or on top of a salad!

My fave easy recipe is cauliflower fried rice! I saute up the chopped cauliflower, add in some herbs, green onions and then drop an egg in and stir. Its so delicious and easy. Would totally love a copy of Gina’s book. It looks awesome.
My favorite go-to recipe is a stir fry or salad made of random ingredients I already have in the fridge. For example, I took 1 minute to assemble my lunch this morning before jetting out the door; it consisted of leftover salmon fillet, homemade hummus, and two veggie muffins.
ALSO, I discovered last night how to make kale chips SO MUCH FASTER! Medium-shred some kale leaves, and put them in a hot pan (no oil or water). Gently stir every 5 minutes for about 10-15 minutes (or faster – just keep an eye on it to not burn). Albeit, I haven’t tried this with any flavoring on the kale. I meant to saute the kale, but it came out as kale chips.
