Thai Chicken Lettuce Wraps

Description
Thanks to simple preparation, this recipe comes together in less than 10 minutes!
Ingredients
- 2 tablespoons nut butter of choice (I used almond butter)
- 1 tablespoon milk of choice (I used coconut milk)
- 1 teaspoon tamari
- 1/2 teaspoon honey
- 1/4 teaspoon garlic powder
- sea salt to taste
- pepper to taste
- 4 large leaves romaine lettuce
- 1 cup shredded chicken
- 1 sliced bell pepper
- sliced pineapple
- 1 tablespoon fresh mint
- 1 tablespoon fresh cilantro
Instructions
- In a small bowl, combine the nut butter, milk, tamari, honey, garlic powder, salt and pepper
- Add the chicken and toss to coat
- Spoon the mixture onto the pieces of romaine and top with pepper, pineapple, cilantro and mint
- Roll up and eat like a taco

Note: I omitted the pineapple because I’m weird about combining pineapple and any kind of meat. I also added avocado because it’s awesome.
Simple, right!? And oh-so-delicious!
Simple is the key word I would use to describe the recipes and workouts in Gina’s new book. But don’t confuse simple with easy when it comes to the workouts! Just because Gina does a great job of explaining and simplifying exercises and providing modifications doesn’t mean the workouts found in HIIT It! won’t challenge you!
Gina is one of my closest blogging buddies and I could not be more thrilled for the release of her new book or more proud of my talented friend. She clearly poured her heart, soul and expertise into this book and it’s jam-packed with great information for those who already feel comfortable with their fitness routine and may be looking for a new challenge and those who may be brand new to exercise.
The underlying theme of HIIT It! is getting more for less. Seeing faster results from shorter (more intense!) workouts. Streamlining your meals to make healthy eating easy and sustainable.
Gina goes into great detail about the foundation of high intensity interval training (HIIT) in chapter one. She provides well-researched information that substantiates the quality workouts detailed throughout the book and provides photos that make it easy for a reader to see how to do exercises while maintaining proper form.
There are more HIIT workouts than I can count found throughout the book which can nearly all be done at home with a few pieces of equipment (dumbbells, resistance bands, etc.). The workouts in this book are also an awesome resource for the busy traveler!
The HIIT It! Diet section of Gina’s book is discusses nutrition in a sustainable way. Gina emphasizes the importance of eating nutritious foods (whole foods with an emphasis on protein and produce) and provides a bunch of simple snack ideas and recipes, like the Thai chicken lettuce wraps you see above. Some recipes that immediately caught my eye: Banana Almond Muffins, Breakfast Cookie Dough Cereal, Orange Honey Salmon and Butternut Squash Mac & Cheese. YUM.

My favorite go-to recipe is a HUGE salad with some kind of protein, tons of veggies, and some feta or goat cheese.

This changes on a weekly basis but currently it’s Mexican Quinoa on a chicken burrito. SO EASY to make and as a bonus it freezes well!!!! I make a double batch every time and hope I have a chance to eat it before my hubby steals it all.
next month I will be doing more workouts at home to save money on a gym membership and for convenience so this would be great to have as a guide.. I love Gina’s blog (and yours too!)!
crock pot buffalo chicken. Some chicken breast, a ranch dressing packet, and a bottle of buffalo sauce. THrow it all in the crock pot and when done add 2 tbs of butter!
I think a copy of HIIT would definitely revamp my workouts! I often find time a challenge in my workouts because I love to lift heavy and do cardio separately but am restricted by the clock. Incorporating HIIT cardio into my routine could solve my problem!

I have been a long time follower of Ginas and was so excited when I saw she was comkng out with a book! Dare I say a favorite simple meal is her infamous breakfast cookie?
However a simple go to dinner is easy BBQ baked chicken. Just top a chicken breast with BBQ sauce and stick it in the oven!

An egg scramble. Just saute whatever veggies you have, crack eggs on top, and scramble it together. I’d like the book to get back in shape after baby. Won’t be able to go to the gym, so it’d be great to have short workouts I can do at home.

My go-to snack is either an apple or banana with some kind of nut butter. Simple and delicious!
1. roasted veggies + over easy egg (boring but easy and delicious); and
2. I am obsessed with cookbooks and I’m always looking for ways to mix up my workouts.
My go-to easy recipe is crockpot taco chicken – you chop up an onion and add it to a crockpot along with chicken breasts, taco seasoning, and a jar of salsa. Cook all day on low and all you have to do is shred it when you get home from work!
I’d love a copy of HIIT It for more workout ideas – I’m kind of in a rut right now. 🙁
We BBQ 20-30 lbs of chicken at a time and cut, bag, and freeze each breast. They make for SUPER easy meal prepping during the week!

1. one of my favorites is to throw whatever veggies I have cooked in the fridge ( I keep them on hand), quinoa (also prepared in the fridge) on a giant salad and sauté a chicken breast. I pile the veggies, quinoa and chicken on a salad and top with hummus, lemon juice, and evoo. delicious and fast!

I love making soup and chili in the slow cooker.. easy to put together and minimal effort for a delicious dish. I’d look to win this book because I do most of my workouts at home.. the book would definitely help!
My go to recipe is a slow cooker one! I combine chicken breasts, corn, black beans, salsa, and some spices (oregano and basil), and put it in the crockpot on low for eight hours. At the very end, I add in low fat cream cheese and shred the whole thing. It’s wonderful paired with a side salad! I would absolutely love this book because as a mom to a 7 month old, it would be great to have a workout guide/ plan that is quick and efficient!

Fitnessista was the first blog I read so I can say that Gina introduced me to the world of blogging. I have been following her journey for five years and I am proud to see that she is now an author. Plus I enjoy her workouts, they are intense but they pay off. As a matter of fact, I am pretty sore after doing one of HIIT work-outs on Tuesday.
I’m having a baby in February and I think this book would help me get back in shape.
