In our house, this recipe is, without a doubt, the recipe I make for our family most often for dinner. It’s SO easy and SO flavorful. It’s also a great recipe to keep on hand when you have guests over (grilling chicken thighs after they sit in this marinade = the BEST) and whenever we make it for friends and family, they almost always request the recipe, so I think that’s a great sign! This aromatic, perfectly savory, fall-apart chicken curry recipe is made with a base of light coconut milk and mashed butternut squash that gives it a velvety, creamy texture. The five star reviews on this one don’t lie!

I love chicken thighs but hate how much work it is to trim them! Do you buy them already trimmed, trim them yourselves, or just go ahead and cook them as-is with whatever fat is on them? Any helpful hints would be great! Love your blog and have been reading for years <3
