First, let’s tackle my dinner highlights, shall we? 😀
Dinner
Since Ryan had a soccer game tonight, after we took Sadie for a 2.5 mile walk, I was all alone for dinner.
You know what that means… Breakfast for dinner!!!
Today I opted for chocolate protein pancakes like the ones I made for breakfast yesterday, but I changed up one of the ingredients.
Instead of cottage cheese, I added a little less than 1/4 cup of pumpkin to the mix and blended the protein powder, pumpkin and egg whites into a thick batter.
While the ‘cakes were cooking on the griddle, I added slices of frozen banana and strawberries to the griddle to heat up as well.
In no time at all, dinner was ready.
I placed the pancakes in the bottom of a bowl before cutting them up and topping them with the sliced strawberries, banana and syrup.
Not to toot my own horn (Toot! Toot!), but this dinner was delicious! I think it would actually make a fantastic dessert if I added a scoop of vanilla ice cream on top. YUM.
While doing the dishes, I also snacked on several handfuls of raspberry Galaxy Granola.
This stuff is addicting…
Top 12 Healthy Frozen Dinners
When I first graduated from college and entered the working world, I lived off of oatmeal, peanut butter and jelly sandwiches, Lean Cuisines and Lean pockets.
This wasn’t due to a lack of interest in nutrition or healthy eating, but I felt overwhelmed at the thought of cooking meals daily and preparing homemade food.
Now I realize that I can make nutritious meals in no time at all. It typically takes me less than 20 minutes to prepare a dinner and my meals are more well-rounded and nutrient-dense. I feel more satisfied and know I’m giving my body good fuel to keep me energized through my daily workouts and everyday life.
That being said, we all have days where pre-packaged meals are our saviors! I definitely gravitate toward the convenience of frozen meals (Hello CPK pizzas!) every now and then.
I found this list of the top 12 healthy frozen dinners (compiled by the director of nutrition for WebMD) quite interesting. The list might be helpful to those of you who are looking for the healthiest options out there in the frozen entrèe arena.

I don’t eat frozen meals very often, but I definitely use them in a pinch. (The frozen Kashi southwest chicken meal is aweeeesome!)

Ummm currently eating a CPK pizza, haha. I just couldn’t bring myself to cook tonight. I used to eat lean cuisines every day for lunch and then I realized how much sodium was in them. No wonder i felt gross!

I don’t really ever eat frozen entrees – I’ve never even tried a Lean Cuisine or anything like that. But I DO like some frozen pizzas. 🙂

Great list! I don’t eat frozen dinners much anymore now that I’m married because we cook a lot more, but I definitely eat them for lunch occasionally in a pinch!

oh my gosh the Kashi Mayan Harvest Bake is SO. GOOD. It is one of my guilty pleasures because it has so many ingredients (polenta, plantains, black beans, sweet potatoes, etc) that I would never be able to make it on my own! I could rave about it forever haha. I definitely went through the lean pocket/yoplait light phase in college! Now I eat those types of things as “junk food” because every once in a while they are delicious, even if super-processed 🙂 What kind of immersion blender do you have? They always look so convenient!

I try to cook as often as possible because I think its fun, but when I’m busy with school and need a quick meal I keep some frozen meals on hand. i love any and all morningstar farms products and they just put out new entrees…I tried the lasagna a few days ago, its great!

Ahhh Kashi Southwest Chicken is my favorite also! In fact, it’s the only frozen entree I’ll eat every now & then! You have great taste! 😉
I’m also a big fan of Quorn Naked Cutlets and Boca Burgers. I can’t live without them!!

I’ll eat a Lean Cuisine in a pinch, which almost never happens. The hubs and I both like Lean Cuisine Butternut Squash Ravioli. Other than that, I don’t eat them because I want all the ones that aren’t good for you!! 🙂

No frozen dinners for this girl! Something about them just grosses me out and they never leave me feeling satisfied.
I take that back, I have had a Amy’s burrito though (a few actually) and those are great and in a PINCH it would have to be a big pinch I would buy and microwave them.

I used to eat frozen meals but every time I eat them I get so disappointed I have completely stopped buying them. I will look at them but I never purchase them because I know I can make it at my place better.

I don’t usually eat frozen dinners…in fact I am not sure when I had one last. Mainly because if I want something quick I always opt for a sandwich. But I DO understand that some people eat TV dinners on a regular basis…my biggest advice is to just watch the sodium content! Great post, Julie!

i use to. but havent since um…October or maybe before that…I often look at the Amys ones but the cost puts me off, so if i am in a pinch for dinner, my go to is either cereal, a smoothie or blindfolded eggs since i always have the makings for those at all times…
but i have to tell you i havent stopped wanting a dang frozen CPK pizza since you posted that!!!
