This series began a while back as a way to showcase what weeknight dinners look like over her for one week of every month. Photos are snapped in real time with no fancy food photography allowed! (Also, no changing clothes allowed as you’ll see if you look closely and notice me sporting the same lounge shorts night after night below. Haha!)
This week’s roundup of dinners includes chicken, seafood, soups, Blue Apron meals and sheet pan recipes and a handful of meals enjoyed with my family because we’re taking full advantage of living near my parents and my sister and her family for a month during our limbo phase of life this summer. I hope something pops out at you and helps make meal planning in your house a little easier this week!
Week of Weeknight Meals: July 2022
Monday: Chicken Noodle Soup
Yes, I am the girl who loves soup even when it’s 95 degrees outside! One major perk of living close to family for a month is the fact that we’ve taken to surprising each other with dinner from time to time! This soup came to us from my sister and it was delicious! It was packed with shredded chicken, pasta, carrots, celery, corn and mushrooms and the bone broth base was so flavorful.
Tuesday: Cilantro Salmon Salads
Marinated cilantro salmon from the Whole Foods prepared foods section called to me when I popped into the grocery store on Tuesday afternoon! I cooked the salmon in the air fryer (yes, I most definitely DID bring our countertop air fryer to Florida with me) and then placed the fish on a bed of butter lettuce, fresh cilantro, roasted brussels sprouts and avocado. I drizzled an orange ginger dressing on top and loved this light and tasty meal!
Wednesday: Creamy Prosciutto and Tomato Pasta
Wednesday night’s meal was a big family dinner with the whole gang and pasta was the name of the game. This recipe was a Blue Apron meal (a group meal delivery — the exact recipe is linked here) and every single person in our family gave it a big-time thumbs up! We managed to stretch the recipe a bit to feed 6 adults by adding additional pasta, tomato paste, capers and mascarpone cheese and will absolutely make this recipe again in the future!
Thursday: BBQ Chicken Drumsticks with Roasted Broccoli and Mixed Grains
This was a sheet pan meal that came together in a flash! On a sheet pan, I placed marinated BBQ chicken drumsticks and broccoli tossed in olive oil, garlic salt and pepper side-by-side and baked everything at 400 degrees until the chicken was cooked through. Clearly I didn’t check on everything too often and the broccoli got a little singed but luckily neither Ryan nor I mind overcooked broccoli so we still enjoyed this meal! I served the sheet pan goods with mixed grains from ALDI!
Friday: Soy-Glazed Scallops with Corn and Spinach Fried Rice
After some late afternoon swimming, we joined my parents for dinner at their place on Friday evening and my mom blew us away with this delicious dinner! It was a Blue Apron recipe (exact recipe linked here) and we could not get enough of it. The soy glaze was a perfect balance of salty and slightly sweet and as someone who can eat my bodyweight in scallops, you know I loved this one! The fried rice was prepared with crunchy cashews, fresh veggies and fried eggs and served as a perfect base for the scallops. I’ll absolutely make for our family again in the future!

I too can eat soup year round. Even when its 100 outside. Chicken noodle soup is always a go-to but we also love clean out the fridge soups and love making an italian sausage, celery, onion, carrot and kale soup in the crockpot (kale added closer to the end) and we add in ditalini pasta for serving and top with parmesan cheese!
