Week of Weeknight Meals: October 2022

Monday: Korean BBQ Chicken Bowls
Our week began on a high note with Monday’s Korean BBQ chicken bowls! (This was both Ryan and my favorite meal of the week!) I followed this recipe from Boulder Locavore for the chicken and served it on top of mixed grains along with cucumbers, blistered shishito peppers, salt, pepper and lots of cilantro. All of the flavors worked so well together and I will absolutely be making this one again.

Tuesday: Pinch of Yum Sunday Chili
You cannot go wrong with a Pinch of Yum recipe and the Sunday chili I made from their blog for the first time on Tuesday night was yet another hit! I followed the Instant Pot directions for the chili and the only changes I made were to omit the jalapeño and bacon (we didn’t have any on hand) and add in a bag of riced cauliflower. We couldn’t taste the cauliflower and anytime I can sneak in additional veggies into our meals, I’m all about it!

Wednesday: Everything Bagel Seared Tuna with Brown Rice and Ginger Sesame Broccoli
This recipe for Everything Bagel Seared Tuna is still my go-to recipe for tuna! I honestly don’t think I’ve made a different tuna recipe in years because we love this one so much. We ate our tuna with simple sides — brown rice and our favorite ginger sesame broccoli — and enjoyed this meal a lot.

Thursday: Instant Pot Shortcut Pot Roast
I made a super shortcut pot roast on Thursday night. My two shortcuts: Using the Instant Pot and relying on a packet of ALDI’s Cook House slow cooker pub-style pot roast sauce for flavor. I first seared the meat using the sauté function of the Instant Pot and then added the sauce, carrots and onions and cooked it on high pressure for 45 minutes. I then added some frozen peas to the mix and served it up with a sprinkle of garlic salt, lots of the broth all over everything and biscuits on the side.

Friday: Leftover Chili
Chase had a soccer game on Friday night so leftovers worked perfectly for our family since we arrived home late in the evening. I reheated Tuesday’s chili and enjoyed it with crushed tortilla chips and a sprinkle of cheese.

I have one child and have a hard time making dinner! She’s always tugging at me and wanting my full attention. I don’t know how you do it, haha. We made Minimalist Baker’s creamy white bean chicken chili this week and it was delicious.

Oh I totally get that — easy dinners are the only way around here and I honestly do a LOT of the cooking/prep-work very early in the day. We don’t mind reheated food and this works well for us because the late afternoon/early evening is often crazy with all three kids running around at home!

Do the boys touch any of these meals? I have two picky eaters and am about ready to throw in the towel and make them 1 of 4 dishes they’ll actually eat every night, haha.

Nooooo! At least not for the most part! They usually eat PARTS of our dinner but very rarely do their plates look the same as ours. I usually include notes about what they ate and forgot to do that this month but I’ll bring that back in my November meal recap!
