Weekend Eats: Breakfast, Lunch, Dinner

A while back, I began a monthly series on the blog to highlight what a week of weeknight meals looks like in our house for one week of every month. Weekend eats haven’t been documented around here in a while so I figured I’d give them a little love and recap our weekend through our meals today! While I did not document any snacks, today’s post includes quick pics of our breakfasts, lunches and dinners from the past two days.

Also, this weekend we had family in town so our meals were made to feed a crowd but still stayed relatively true to what a lot of our weekend eats look like around here.

Saturday

  • Breakfast: Zucchini Egg Casserole with Strawberries and Whipped Cream

On Saturday morning, the boys and I ventured into our garden and picked a few more zucchini. Our zucchini plants are thriving and we’ve been consuming zucchini at warp speed around here. I figured I could incorporate zucchini into our breakfast and whipped up a zucchini egg casserole for our crew. I’ve been playing around with measurements for a zucchini egg casserole for a while now and have officially dialed it in! This casserole was a big-time winner and we all loved the combination of zucchini, egg and cottage cheese (they key ingredient and the reason it tastes so deliciously cheesy). I hope to share this recipe with you guys soon.

On the side we had fresh strawberries and homemade whipped cream for a little something special since we had family in town!

  • Lunch: Peanut Butter and Jelly Sandwiches, Chips, Peppers and Peaches

We spent most of Saturday in the lake either swimming, boating or floating! This meant we didn’t want to pour much time into lunch and opted to dig into lunches that resembled our kids’ plates. My brother-in-law made peanut butter and jelly sandwiches for all of us while I sliced bell peppers to enjoy on the side. We rounded out our plates with chips and some grab-and-go fruit (I had a peach) and made our way back out onto the lake for an early-afternoon boat ride.

  • Dinner: Paleo Marinated Chicken Thighs with Roasted Broccoli, Sweet Potato Fries and Bread and Butter

I told you guys a while back that this recipe for Paleo Marinated Chicken Thighs the blog recipe we make most in our house and that continues to be true! It’s also our go-to recipe to serve when we have guests in town because it comes together fast and is a no-fail recipe people seem to love.

We paired the chicken thighs with roasted broccoli, sweet potato fries, bread and butter and dug into the meal outside as the sun was setting. Not a bad way to end the day!

  • Dessert: Vanilla Ice Cream with Homemade Chocolate Chip Cookies

Earlier in the day on Saturday, while the little kids were napping, Chase and Ryder helped me make a batch of chocolate chip cookies. (We just followed the recipe on the back of the bag of Ghirardelli chocolate chips because it’s great.) We warmed up the cookies on Saturday night and topped them with vanilla ice cream. Ice cream with some kind of a warm treat (cookies, pie, oatmeal apple crisp, etc.) is my all-time favorite dessert so this one was right up my alley!

Sunday

  • Breakfast: Scrambled Eggs, Toast and Berries

Sunday morning was departure day for our family. We were so bummed to say goodbye to everyone but felt so grateful for the past 10 days we had with people we love so much. Since everyone was heading out early, we kept things simple with scrambled eggs, buttered jelly toast and berries for Sunday morning’s breakfast. (I forgot to snap a pic until everyone was done eating but the picture of the extra leftovers eggs give you the idea, right? Haha!) I also ate a chocolate chip cookie immediately following my breakfast because the cookies were calling to me from the tin on the kitchen counter.

  • Lunch: Birthday Party Buffet

Sunday afternoon had our whole family at the pool for a birthday party to celebrate two of Ryder’s friends. They had a buffet set up for kids and parents and I had two sliders, chips and fruit salad.

  • Dinner: Leftover Zucchini Boats

I told you zucchini is taking over our meals! On Sunday night some vegetables finally made their way onto my plate thanks to reheated zucchini boats leftover from Friday night’s dinner. They were just as delicious the second time around! You guys recommended zucchini boats to me when I was looking for ideas for how we should use all of our zucchini they were a hit! We followed this recipe and it was great, though I would recommend baking the zucchini boats without the filling in them for 15 minutes or so to soften them up a bit before filling them up and baking again.

    Very much enjoyed this post. I love your ideas on zucchini as it tends to be a favorite in our family and not as expensive as other vegetables!.
