On Sunday or Monday night, I cook up a big batch of wheat berries and then incorporate them into lunch, dinner and snacks throughout the week. They’re chewy, high in fiber and taste great tossed with roasted vegetables, sprinkled on top of Greek yogurt with a drizzle of honey or even on their own.
Last Friday, I made a fantastic lunch that centered around wheat berries.
If you’re a big fan of traditional Waldorf salad made with chicken, I think this lunch may be right up your alley. It’s a vegetarian dish that is super filling thanks to the high-fiber wheat berries and protein-packed Greek yogurt.
Since I first made the salad on last Friday, I made it again, but slightly sweeter, so below you will find two variations of the salad.
Wheat Berry Waldorf Salad (Savory)

Directions:

I have actually never hear of wheat berries! Am I crazy?? Where in the store do you find these?!
Ellie@Fit for the soul says
Hi Jamie! Sometimes they’re actually in packages around the rice, grain, etc. section. But most of the time you can find them in the bulk bin aisles 😀
And Julie, this looks sooooo divine!! But the only thing about wheat berries for me is that my jaw hurts after eating it and I have my constantly locking jaw to thank for that 🙁

Love wheat berries! I even eat them on their own for breakfast or a side dish! Need to try them in yogurt!

I think they are a little chewier than barley. If you like barley, I think you’d love them!

Hi Julie! I’m seventeen years old and you are my inspiration for my future. If I turn into half the lady you are one day, I will be content. You are truly incredible in countless ways. But anywho! I’m getting off topic. 😛 Which salad did you prefer more? Savory or sweet?
Julie @ Peanut Butter Fingers says
Thanks Julia! I liked the sweet one a little more. 🙂

Great recipes!! I love the sweeter version as well, especially for lunch 🙂

Yum! I haven’t actually cooked with wheat berries but love all sorts of fun grains in my lunches and dinners. When I think of wheat berries, I think of them as having a chewier, denser texture than some grains. Is that true? If so, I would probably love them.
