Naturally, a salad seemed like the easiest way to do this!
In the mix:
- Shredded iceberg lettuce
- Large carrot, chopped
- Orange bell pepper, chopped
- One celery stalk, chopped
- Roast beef
- Pace black bean and roasted corn salsa
Phew! The salsa had a kick to it and made this whole salad taste very flavorful!
I was thankful for a cup of Greek yogurt to cool my mouth down a bit after this meal.
I was also quite grateful for some Guylian chocolate.

I haven’t been able to eat chocolate for years because it’s been a fear food, honestly Guylian has always been my favourite and now I’m learning to enjoy it again in small doses without guilt! Oh I ADORE chocolate but it wasn’t until my 20’s that I actually started to really like it. Now I think I just appreciate it more. My favorite way to enjoy chocolate is in the warm melted fondue form. Nothing like dipping a fresh juicy strawberry into a warm pot of decadent dark chocolate.
