Good afternoon!
I’ve spent the day catching up on neglected work from the weekend, including sending out some invoices for freelance projects. I always make sure to send out freelance articles on time but am terrible about sending out the corresponding invoices to ensure I am paid for my work. You’d think I want to work for free or something. (Not true.)
It reminds me of this picture that my sister sent to me that she found on Pinterest:

Wooord.
I also had a lunchtime meeting at the local college to work on the website and social media outlets for the Taste of Ocala. I think I’m going to be the one manning the Taste of Ocala social media accounts, so if you’re a local Okie Dokie (<—what Ryan and I call Ocala residents), I’ll be sure to post links to everything when they’re up. Then we can all eat and drink the night away on May 5!
Lunch
I ended up eating my morning snack a little later than usual, so I didn’t eat lunch before my meeting and by the time it was over my stomach was growling and I needed something fast. (I need to start keeping emergency snacks in my purse.)
I booked it home and made myself a veggie burger on a toasted whole wheat bagel with tomato, cucumber, spinach and spicy mustard.
I ate the burger with two Babybel light cheese wedges and a cup of Oikos key lime Greek yogurt.
Ryan and I are convinced that if you crumbled up graham cracker crust pieces on top of the key lime pie Greek yogurt, you’d have a legitimate dessert.
Great lunch!
Haha–love that PIN. Seriously–who works for free anymore?!
I love Greek yogurt in the middle of the day…..you just inspired my mid-afternoon snack, my friend. Thanks 🙂
LOL I always find the best quotes on Pinterest too! Lunch looks scrumptious! 🙂
Man. That sammich looks good!
What brand bagels do you guys get?
It seems like my local store ONLY carries Thomas’ brand. And, they are good… but yours look remarkably better!
whatever kind is on sale! 🙂 i will often buy the ones from the bakery section, thomas’, alternative bagels, etc.
Well, now I’m totally buying graham crackers ’cause I already have some of that key lime yogurt in the fridge!
Oh my gosh I just ate that exact yogurt for breakfast this morning and thought the same thing!!! Graham crackers are a must!
I need to try that lime greek yogurt, I don’t think they’re in Canada yet, haha!
What kind of veggie burger is that?? I want to fun some good premade ones, frozen or not.
morningstar farms california burger!
I agree, those yogurts are wonderful!
that looks like such a yummy lunch! i’m always so tempted to buy some premade veggie burgers, but i never want to pay for them because i feel like they’re an “extra” thing that i don’t really need. this time i might just have to bite the bullet and buy them. they would make such an easy lunch or dinner option! then again… there comes in my guilt of being lazy… ha. we’ll see.
That sounds amazing! I just had key lime pie for the first time ever recently, and I’m hooked. Key lime yogurt + graham cracker sounds like a great healthy alternative!
Sounds like such a fun community service project! They are lucky to have you and your social media knowledge! I am curious about the freelance writing invoices. After your articles are published you have to ask to receive your payment? The magazines/newspapers/etc don’t automatically pay you for your work? Just wondering a little more how that all works. Thanks!
nope! i’m usually paid after i submit an article and submit a corresponding invoice. payment usually comes before it’s actually published.
I think graham crackers alone are a FANTASTIC dessert or midday snack, or breakfast hehe. I hate that feeling – when you’re starving and you run into the kitchen and try to make your food as fast as possible. Emergency snacks are key!
Do you have a program or software that you use for invoices, or is it more of a general “Here’s what you owe me” letter?
(And your lunch looks delicious! I’m a sucker for fresh toppings and some mustard!)
i simply type them up in microsoft word. 🙂
I love adding cereal or Graham Goldfish to fruity yogurt to make a knock-off pie!
I’ve never seen key lime greek yogurt!! I’ll have to look harder next time!
I love the Dannon Greek yogurts. I’ve had the key lime before, but now I have to try it with graham crackers. The strawberry us my favorite flavor.
Isn’t Pinterest so addicting?!? I love it.
Love the babybels! that brings me back to my childhood!
I’m horrible at sending invoices out. I’ve actually had clients ask me if I plan on getting paid for all my work. Oops!
I often add cookie crumbles to my yogurt to create tasty and light desserts. Another fav is chocolate wafers on strawberry yogurt or gingersnaps on lemon yogurt!
Ahhh I’m sitting in class and that turkey burger is making me hungry!!!
HA! Another great Pinterest find. Now if only I could get paid for pinning…
photos on pinterest fit my life perfectly! haha. I want to do a Taste Of Nashville…such a good idea
Random question – do you buy regular whole wheat bagels or the mini/toaster sized ones?? That bagelwich looks delicious!
Housewives/stay at home moms and dads “work for free” … But your kids (and your pets) are the best payday ever!
Oh yes….love baybel cheese. Got me craving cheese right now!
Yum! What veggie burger brand is that?
morningstar farms. it’s the california burger!
That lunch looks so so good!
Making veggie bagelwiches are one of my favorite ways to eat bagels! They’re so satisfying and you sneak in a few servings of veggies!
I had the Oikos Key Lime for the first time today and it was seriously delicious. I felt like I was eating something that I shouldn’t! I feel the same way about their vanilla flavor.
Love spicy mustard! I need to try key lime yogurt!
Mmmm that oikos sounds fantastic! And it sounds like you’re still a pretty disciplined person overall! 🙂
looks yummy! is that an alternative bagel? i know youve mentioned them on the blog before. do you buy them in stores or order them?
it is! they were BOGO at my local grocery store.
I’ve never seen such a flavor of greek yogurt before! I feel like there’s only plain/blueberry/strawberry in my publix, but then again I never buy greek yogurt. You may have just inspired me!
I’ve never seen this flavor of greek yogurt! I must find it soon!!! I read your post this afternoon before I left work and stopped at Publix on my way home but they didn’t have that flavor (and I LOVE key lime pie). I’ll keep trying though. I was even going to buy graham crackers to crumble on it 🙁
That veggie burger looks so incredibly fresh it’s making my mouth water!
I want to say thank you for having such an awesome and helpful sight. Mostly, that your sight is so healthy, I don’t hesitate to recommend it to my daughter who is a Sophomore in college. She decided she wanted to go back eating healthier and working out. She asked me to recommend some workouts, etc…. I sent her straight to your blog. She loves it!!!!!
thank you so much for such a kind comment, linda!
That veggie burger looks yummy and like one of my typical lunches. What kind is it? I just wrote a post about trying to make my own… *ambitious*
Haha I’m going to have to tell my Ocala friends about the okie dokie nickname. I’m curious about the taste of Ocala. I lived in Gainesville for school and we always thought Ocala only had cows (which I know not to be true bc of your blog).
it’s kind of true… 🙂
Oh my god, from that picture I thought you were trying mint Greek yogurt or something at first because of the green tint. I almost threw up my late-night salt and vinegar chips snack (which would have been a DISASTER).
Forget the dessert, that sandwich is legit! I haven’t had a bagel in forever!
what if you mixed in graham cracker crumbs and then drizzled just a teensy weensy bit ‘o raspberry syrup on top?!
Hi Julie, I am also a freelancer (an editor). I try to send my invoice back with my work if I can, otherwise it seems to take me forever to get around to it, even though it only takes a few minutes to actually do it! Really enjoy reading your blog!
i haven’t read your blog in a while so i went to look and it just made me smile! This is my absolute favorite blog:) Go Julie!
thank you so much, em!
i LOVES me some babybel cheese, and Ive only ever had Chobani, and im not sure i could try a different greek yogurt, but that does sound amazing!
I’m just getting into freelance work and I’m so terrible at invoices! Lucikly, a few places I’ve worked with have their own forms but I really need to develop my own and remember to use it.
Have you ever thought of doing a post on how you got into freelancing? It’s something I’m trying to get into, but I’m having a hard time finding out which job descriptions are legitimate, and who to communicate with. If you don’t want to do a whole post on it, I can email you..but it’s something I’m really interested in :).
here ya go: https://www.pbfingers.com/2011/11/29/blog-talk-tuesdays-part-viii/ 🙂
Hey! Look what day it is! National Peanut Butter Day!
http://www.punchbowl.com/holidays/national-peanut-butter-day
Mmm I LOVE Key Lime Greek yogurt. I think Key Lime might be my favorite yogurt flavor in general. It’s just SO. GOOD!
I totally get you on the freelance ain’t free thing. I can’t tell you how many postings there are asking for designers and not wanting to pay anything! If I wanted to “build my portfolio” I’d do it on my own time with my own personal projects! Not on a website that’s going to take me 80 hours. People are ridic and I am ranting. The end.
i feel ya!!
